Growing microgreens can be so rewarding, but couple that with using them in some of our favorite recipes and you’ve really got something special.  A flavorful  cajun cacciatore with spicy diced tomatoes, green chilies, and topped with Rambo Radish microgreens has the perfect kick to your taste buds. Below you will find one of our favorite family recipes.  Enjoy!

Cajun Cacciatore

Servs 4-6

2-3 large chicken breast, thawed, cut into large pieces

1 large onion, sliced and rings separated

2 Tbsp butter

1 C. Milk

1 Tbsp dried oregano

2 cans chopped and diced Ro-tel tomatoes with green chilies

 

Directions:

In a Dutch oven, brown chicken with onion on all sides in melted butter.  Add Rotel tomatoes, milk, and oregano then bring to a boil.  Reduce heat and cover to simmer for 30 minutes or until chicken is tender.  Uncover and continue cooking for 15 minutes.  Ladle over rice into a bowl and top with Driftwood Drew’s Microgreens.  Company choice –Rambo Radish

Side dish choices for this cajun cacciatore may be green beans or butter crisp salad with cucumbers, cherry tomatoes, and Italian dressing pairs well with this dish.
